Start your day with these zesty, orange protein pancakes or advance prep a batch for a tasty pre-training snack.
160g natural yogurt
2 tsp. coconut sugar
2 tsp. orange peel zest
2 tsp. vanilla extract
120g spelt flour
1 scoop (30g) vanilla whey protein powder
1 tsp. baking powder
Orange slices, to serve
Mix the egg, yogurt, sugar and orange peel zest. Fold in the flour, protein powder and baking powder and mix well until smooth. If needed, stir in a few drops of cold water to achieve a dropping consistency.
Fry the pancakes on a dry non-stick pan over low-medium heat until golden brown.
Serve with slices of orange.
