Salmon Quinoa Bowl

Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is also high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. Paired with salmon, you have a nutrient-dense meal that your body will thank you for!

Serves 1


Ingredients

  • 45g uncooked quinoa

  • 125ml water

  • A pinch salt and black pepper

  • 1 tbsp low-fat natural yoghurt

  • ½ a beef tomato, sliced

  • 2 tbsp avocado

  • 30g cooked salmon

  • A handful of rocket

  • 1 tbsp feta cheese

  • 2 tsp dried oregano


Method


  1. Bring a saucepan of water to the boil over a medium heat and add the quinoa. Cover and let the quinoa simmer for 10 to 15 minutes until the water is completely absorbed and the quinoa is fluffy.

  2. Drain the quinoa and transfer to a bowl to cool.

  3. Once the quinoa has cooled, stir in the avocado, tomato, salmon and rocket making sure that it is well mixed.

  4. To make the dressing, combine the yoghurt, feta cheese and oregano in a small bowl.

  5. To serve, add a dollop of yoghurt dressing on of the quinoa and enjoy
