Vegan High Protein Cookie Dough

Getting enough high biological value protein on a vegan diet is no problem when you get to enjoy delicious snacks like this protein cookie dough. I really enough it as a dessert in the evening when sweet cravings can sometimes hit. It's filling and delicious.

Serves 1
Protein Cookie Dough Ingredients
125g plain, unsweetened soya yoghurt
1 scoop (30g) vanilla vegan protein powder
1 tsp psyllium husk (or milled flaxseed)
½ tsp vanilla extract
10g quality extra dark chocolate (vegan, 80-90% is good)
Method
Finely chop the dark chocolate and set aside.
In a bowl combine all the other ingredients, stirring well until a clumpy texture forms. The fibre from the psyllium husk or milled flaxseed will really help here (whilst also giving you gut-friendly fibre!).
Once ready, stir through the dark chocolate and enjoy.
