Microwave Blueberry Muffin

If you want a sweet treat without mess or fuss, look no further than this single serve microwave muffin.

Serves 1



  • 1 tbsp coconut flour

  • 1 tbsp almond flour

  • 1 tbsp oat flour

  • 2 tbsp granulated sweetener of choice

  • ½ tsp baking powder

  • A pinch cinnamon

  • 1 large egg

  • 1 tbsp mashed banana or pumpkin

  • 1 tbsp semi-skimmed milk or dairy alternative

  • 2-3 tbsp frozen blueberries



  1. In a small bowl, combine all the dry ingredients and mix well.

  2. Add the egg, mashed banana and milk, and mix until fully incorporated.

  3. Fold in the blueberries, making sure you can see a few poking out the top.

  4. Microwave for 50 seconds (850w).
